I keep seeing people pin recipes for what they’re calling roasted cabbage “steaks” and I had to give it a shot. I mean, it looked so easy! All you do is slice your cabbage into 1/2″ slices, roast, and then enjoy delicious, delicious cabbage! What could be better?
Well, it turns out pretty much every other cabbage recipe I’ve ever tried. This was bland as hell. And frankly it took longer to cook than my much better pot of cabbage. So basically, I’m giving this a pretty solid thumbs down. I think it’s a great idea but somehow the cabbage ended up both dry and undercooked at the same time. Strangely rubbery.
Once I was done cooking per the directions I ended up throwing them under the broiler for a few minutes. The burnt parts were so much better than the rest of it!
The burnt bits may have been tasty, but the rest was still uncooked and rubbery. Yuck!
Edited to add: I tried this one more time and really drenched the cabbage in oil instead of giving it a light mist. The cabbage did cook up better this time, but who wants to eat that much oil? When I’m cooking cabbage for dinner I’m expecting a low-calorie meal, not a plate full of fat!
