I always have leftover French fries when I choose them as a side at lunch. And you feel guilty if you don’t take them with you. But you also aren’t sure if you’ll eat them. Maybe I overthink the whole thing, but whether to take my fries with me is often a source of low-level stress. Anyway, a couple years ago it occurred to me that fries are just pre-cooked potatoes. And that leftover fries are a great time-saver when you’re trying to get a meal done fast. So now I make a French fry frittata when the mood strikes. My mom always tells me that sounds disgusting. And that I shouldn’t share this shame with the world. But here it is!
French fry frittata
- 1/2 onion, chopped
- leftover French fries
- 3 eggs
- 2 tablespoons milk
- 1/4 cup shredded mozzarella
Heat up some olive oil in a frittata pan and saute your onions over medium heat! (Use the smaller of the frittata pans, or you’ll have a little mess later)
Chop up those French fries!
Add them fries to the pan once the onions are cooked!
Sprinkle some cheese on top of that shit!
Beat those eggs with those tablespoons of milk! Salt that shit!
Pour the eggs over the potato/onion/cheese deliciousness!
Cook until it looks like the top of the frittata is starting to set up!
Now, here’s where you’ll be glad you have a frittata pan set! Put the second pan on top of the first.
That looks delicious! Now just cook until the bottom is browned. Flip it out onto a plate.
And serve with salsa and sour cream!
I’ll tell you what! That was yummy! I must have had more fries then you cause I had to use 4 eggs. I added a little garlic at the end of the onion. And a few different cheeses cause I had so many open already. Plus I finished it in the oven.. my husband really liked it too, had 2 helpings, and he wasn’t very enthusiastic when I told him what it was. The leftovers will be great with breakfast. Thank you!
